About this product

This is a flour of very fine particle size, treated to reduce the gluten strength. This premium grade flour produces cakes with a delicately fine, light texture due to its fine particle size.

 

The flour has a whiter colour that imparts better visual appeal to sponge cakes and other chemically-raised, cake-like products. The crumb is whiter and brighter. The flour has a lower gelatinisation temperature than normal cake flour, which enables faster setting and decreases the loss of leavening.
